Executive Chef Jason Jonilonis has enjoyed an honored reputation with his tenure at Westward Look’s lauded Gold Room. When the historic Tucson resort added its new wellness center, Jonilonis added a spin to his already well-known NewArnerican Sonoran cuisine. Called Catalina Cuisine, the inventive and healthy southwestern approach turns smartly and successfully to local traditions and resources.
Of particular influence are the Pima, a local Native American tribe. After spending time in their homes and kitchens, Jonilonis returned to his staff with a sage observation: In the Pima language, the words for wellness (doajik) and wildness (doajim) share the same root.
Turning to Phoenix ethnobotonist Lina Austin, Jonilonis was delighted to learn that his local Sonoran desert boasts more than 375 edible and nutrient-rich plants. Innovations involving beans, corn, squash, chilis, and even cholla buds and prickly pear are the delectable, healthy result. Like his organic garden, Jonilonis’s menu is alive and growing, strong and robust.
